The Beginning
When our founder Konstantinos moved to Maryland from Greece in 2012, he came with his family and a craving for something familiar. He was looking for a place where he could grab a warm pita, a proper yeero, something quick and fresh that reminded him of home. But nothing felt quite right. His kids missed those familiar flavors too, and he wanted them to grow up eating real Greek food made with fresh ingredients.
The next year, the idea for Eat Like a Greek began to form.
The Obstacles
At first, it was just a passing thought. Between adapting to life in a new country and working multiple jobs, there wasn’t time to act on it right away. But the thought never left. Konstantinos began taking cooking classes, spending over two years learning the systems, improving his skills, and getting a feel for how food should be prepared and served consistently. There was no clear roadmap, but the vision became stronger with each step.
Starting Eat Like a Greek
By 2016, it was time to move. After reading about a military base looking for food trucks to serve their community, Konstantinos decided to make it happen. He traveled to Texas to build a custom food truck and brought it back to Maryland. On December 15, 2016, the truck officially opened for business.

At that time, Greek street food was rare in the area, especially from a truck. But people were curious, and once they tasted the food, the response was immediate. The flavors were different in the best way. Everything was based on traditional recipes from Northern Greece, passed down through Konstantinos’s family. The ingredients were simple, the food was fast, and it was made with real attention to detail.
The Growth
Soon, the truck was booked at local breweries, wineries, and festivals. As its following grew, it was clear this was more than a one-time idea. A brick-and-mortar location opened, then a second. Eat Like a Greek became a local name, featured in the Baltimore Sun and APG News, even earning a thank-you from the General of Aberdeen Proving Ground. With food awards and loyal fans, the journey keeps growing.
The Future
Looking ahead, there are plans to open more locations and expand the menu with new Greek specialties, while staying true to the roots that started it all. The mission has always been the same. Keep it real. Keep it fresh. And make every meal something that feels like home.
